Volcano Cookies

A butter cookie, with a mound of nuts in the center.

Ingredients:

1 cup butter or margarine (butter is better)
1/2 cup granulated sugar
1 egg
1 tsp vanilla
2 1/2 cups all purpose flour
1 1/3 cups finely chopped walnuts
1/4 cup corn syrup

Instructions:

In mixing bowl, cream together butter, sugar, egg and vanilla until light and fluffy.  Gradually stir in flour, then mix by hand to form smooth dough.  Transfer 1/3 cup of dough to small bowl and mix in nuts and corn syrup.  Set aside.

Shape 1 1/2 tsp of plain dough into rope 4 inches long.  Repeat with remaining dough.  On ungreased baking sheets, join ends of ropes to form circles.  Fill centers with small spoonful of nut mixture.  Bake in 350F (180C) oven for 12 to 15 minutes or until light golden.  Makes about 48.
